    Re: Squirrel

Elliot: Depends on the squirrel, a big old buck (you can tell by the uh…. Acorns) should probably be made into a stew (boiled for a long time) to tenderize it, kinda like chicken soup, but a young tender one can be sautéed in a little butter with salt and pepper, maybe a strip or two of bacon. There should be some good wild game recipes on the internet. A guy has gotta learn how to cook what he kills.

It's a really big female one, so I'll just see what I want to try and I'll go for it.

    Re: Squirrel

My mom has a Southern cookbook from the mid 1800's. In it is the original recipe for Kentucky Burgoo, the one they made on Derby Day every year, made in giant cauldrons over a fire. It makes about 1500(!!) gallons, and uses quite a few dozen squirrels.
Maybe you could try making that one.............send a potful to all our forum members!!
I'll have to borrow that book and find the recipe just for fun-- we always joked about cooking up a batch with the neighbours!!

oh god you guys are serious aren't you...
I must admit I have stopped to pick up fresh road kill pheasant,(of course hit by the car in front and not me ) stewed freshly shot rabbits and duck...but squirrel...I have no idea why but to me it would be like eating your pet hamster crossed with a ferral rat....

    Re: Squirrel

Yup. What's so special about squirrels? Small arboreal rabbits with big fuzzy tails.

And I just want to point out that while I would have a problem eating my own pet hamster, I'd have no problems eating somebody elses.
