Still maintain, its cleaner to cut up semi-frozen pinks, I take them out of the freezer for about a minute or two, and then use a heavy butcher knife, line it all up and force down.

As long as I pile all the cut pinky into a bowl before it thaws, I can just grab strips with tongs.

Scissors are better for cutting pinkies. Just thaw them out completely.

btw, Stefan, my sliced pinkies look exactly like that after being cut frozen I say whatever works!
