Traditionally, squirrels are sautéed.

Jamie says his mom soaked them overnight in salt water, then battered it and fried it, like she did rabbit.

I guess the first step is to kill it!:D

Would you shoot it? Or snare it? Or wrestle it to the ground and subdue it with a Vulcan death grip?

I'd use harsh language.

Elliot: Depends on the squirrel, a big old buck (you can tell by the uh…. Acorns) should probably be made into a stew (boiled for a long time) to tenderize it, kinda like chicken soup, but a young tender one can be sautéed in a little butter with salt and pepper, maybe a strip or two of bacon. There should be some good wild game recipes on the internet. A guy has gotta learn how to cook what he kills.:D

It's a really big female one, so I'll just see what I want to try and I'll go for it.

you could try this classic recipe:

My mom has a Southern cookbook from the mid 1800's. In it is the original recipe for Kentucky Burgoo, the one they made on Derby Day every year, made in giant cauldrons over a fire. It makes about 1500(!!) gallons, and uses quite a few dozen squirrels.
Maybe you could try making that one.............send a potful to all our forum members!!:D:D
I'll have to borrow that book and find the recipe just for fun-- we always joked about cooking up a batch with the neighbours!!:p

oh god you guys are serious aren't you...
I must admit I have stopped to pick up fresh road kill pheasant,(of course hit by the car in front and not me ;)) stewed freshly shot rabbits and duck...but squirrel...I have no idea why but to me it would be like eating your pet hamster crossed with a ferral rat....
Stefan-A
12-18-2007, 02:49 PM
Yup. :D What's so special about squirrels? :) Small arboreal rabbits with big fuzzy tails. ;)
And I just want to point out that while I would have a problem eating my own pet hamster, I'd have no problems eating somebody elses. :p

3-4 squirrels, 1 can mushroom soup, and a crock pot.
Cover the top of the meat/soup with Stovetop stuffing and cook all day.

My grandfather used to catch them for food when he was a kid back in the 30's. I'll ask him how they cooked 'em. I bet it tastes like chicken, lol... EW :p

Wouldn't recommend eating anything raw on an animal. They always have parasites.

yeah i know that lol we use to eat elk liver to raw... gives you lots of strength... and really good for the heart...

which - elk or liver?
and personally - despite the danger of parasites I prefer most meats rare
in fact I just suddenly had such a powerful craving for beef tartare that I actually began considering where I would be able to get the quality beef one needs when one intends to consume it entirely raw - not to mention the eggs
CrazyHedgehog
12-20-2007, 04:16 PM
beef? yep I eat very rare beef, but brains of anything goes in the bin! yeeuuuch:p
drache
12-21-2007, 05:29 AM
brains are yummy breaded
the texture is a little like sea urchin
I've never had them raw and I'm not likely to try that with something from the commercial beef industry
I'm daring, but MCD doesn't sound like fun at all and I suspect that their bottom line still overrides public health when they're able to (what's the current euphemism for bribe?)
there is a local meat CSA though that I'll be joining - somehow I feel safer with their meat

Do you guys want to see the GROSSEST food I ever tried to cook?? Yeah, it was so gross I even took a pic of it, while hubby and I stood over the crock pot going...
"YOU try it!"
"No, no, YOU try it first..."
"I cooked it, you try it..."
"Cook gets first taste..."
"Out of politeness, YOU get first taste..."
LOL, you get the idea. And here it is, for your viewing pleasure:

We couldn't do it, I fed it to the dogs. Who, incidentally, seemed to love it.

you should try cooking the squirrel bear grylls style. with a stick and a homemade fire in the back yard, saw him do it in an episode once was pretty crazy. he even ate raw goats testicles.
Stefan-A
12-22-2007, 04:39 PM
The only thing I'd consider cooking Bear Grylls style, is Bear Grylls. Not that cooking squirrels in the backyard over a homemade fire is bad advice, I just dislike the guy.

Well... do you eat the outside rough part or just the inside??? And was crock potting it with gravy a good way to go too?? I actually am pretty open to eating just about anything, lol, but that rough tongue (which did come out of a cow we raised, so I kept thinking of him licking me) turned me off...

I also have to agree, I like tongue a lot. But my favorite food are kidneys in a white wine sauce, mmmm....
I'm from a bucher family, so I think I've eaten pretty much everything you can eat of an animal. Brains are pretty grose to see, but are yummy. To bad, you can't eat them anymore since those 'mad cow' disease ( hopefully it's the correct english translation ).
I've also eaten crickets, worms, dog, ... most people will probably find that also pretty grose...:p
I'm always amused when people say they don't eat kidney, liver, tongue, ... BUT they do eat hamburgers:rolleyes:

so has anyone here actually tried rocky mountain oysters?
oh
and it's amazing what kinds of things people will happily eat until told what it is
the mind is a terrible thing to let govern your taste buds
Snaky
12-26-2007, 09:47 AM
Indeed Rhea, and don't forget that hamburgers and others the like mostly contain everything of an animal... it's just well mixed and added flavours.
Didn't even knew that the rocky mountain oysters existed, so never tried it... Maybe some day, if I see it on a menu:)
Lori P

I *think* Rocky mountain oysters are sheep's testicles, and Texas oysters are bull testicles. But don't quote me on that.

In Ohio, I have heard chicken testicles called mountain oysters, too.
Remember the scene in one of Chevy Chase's movies, where he wins a contest to eat the most "Lamb Fries", and then finds out they are sheep testicles? Can't remember which movie it was...

hm
now I'm curious
I wonder which kind of ethnic butcher would carry them in NY
probably neither the kosher, nor the hallal, nor the italians either, I would think
perhaps I'll try a polish or russian butcher
how do you prepare them, if you're not into deep frying?
